
COSTA RICA SANTA TERESA
Roger Ureña is fairly new to coffee production and processing, but has already proven to be able to produce incredible quality. His farm and mill (both named Santa Teresa) are at a staggering 2100m in Dota, Tarrazu in the eastern side of the Costa Rica’s main coffee producing areas. This lot is filled with flavors of ripe apricot, and punchy red grapes; the body is rounded like cocoa. The white honey process on this coffee means it is essentially a fully washed coffee. For white honey they run the coffee through the mill at a very slow rate which creates a lot of friction and removes the extra mucilage, leaving clean coffee that has been mechanically washed and exceptionally clear in the cup.
